It began with a revamped version of my oatmeal peanut butter protein bites recipe and continued with s’mores and white chocolate no bake protein bites creations. They’re just so easy to make, delicious, and make the perfect grab-n-go snack or sweet tooth killer. Out of all the aforementioned protein bites, I believe this is my favorite. The toasted almonds and coconut give this a bit of crunchy sweet goodness that is really satisfying.

The recipe has only five ingredients and is very easy to prepare. My only advice here is to use a whey protein powder that bakes well. I used Jamie Eason’s vanilla whey concentrate because it is delicious and the texture is great when baked! Some whey powders (like very clean isolates) don’t bake into a soft texture. Because this is a simple recipe with few ingredients, it is important to keep that in mind and choose the right type of whey. I wouldn’t recommend vegan protein powders or casein for this recipe.

(Starbucks, I’m looking at you.) Homemade muffins can still run you over 200 calories. So you can seriously enjoy these muffins whenever a craving strikes!

When it comes to getting enough protein throughout the day, I usually have no problem. Milk with meals? Check. Yogurt and hard-boiled eggs for snacks? Check. Chicken OR beef for dinner? Check. Eating regular meals and snacks daily? NOPE! Not with my erratic schedule of feeding a toddler and a newborn— and chasing, entertaining, bathing, etc. them when I’m not feeding them. Keeping protein balls in the house has been a must for us. I love grabbing one before I head out on the dog walk in the morning, or sneaking one before bed. It’s definitely a must for our trips! We love keeping these in the hotel for when we are hungry and need a quick snack. I thought it would be fun to make a fall-flavored protein ball for our trip next week!
